I made my own version of pasta carbonara without egg and heavy cream, and bacon. Since bacon is not really popular in India, I cooked my usual pan-grilled chicken to partner my pasta carbonara.


Try my pasta carbonara with pan-grilled chicken recipe and tell me how it is. It’s so simple and cheap.



250 gms long pasta (spaghetti)

1 medium onion, chopped

2 cloves garlice, chopped

1 teaspoon flour

cheddar cheese, grated

1 cup milk

salt and pepper


1. Boil water with salt. Cook pasta until al dente. Drain and keep aside. Tip: Cook pasta while the chicken in marinade.

2. In sauce pan, put olive oil, onion, and garlic. Saute until garlic is golden brown and onion is translucent.

3. Pour the milk into the sauce pan. Lower the heat. Stir continuously. When it’s already simmering, put the cheese and flour and continue stirring.

4. Taste with salt and pepper and continue stirring until the liquid reach the desire consistency. Tip: Make sure to keep a thin liquid consistency. The liquid will thicken while waiting for the chicken to cook.


boneless chicken breast, cleaned and make small criss-cross cut on one side

marinade (salt, pepper, lime juice, olive oil)


1. Marinade the chicken for 15 minutes.

2. Heat the pan, put a dash of olive oil. Pan fry the chicken, 5 minutes in each side, do not over-cook, it will dry the meat. Tip: Cook the chicken after cooking the pasta and the sauce.

To Plate:

1. Arrange the pasta on the plate. Keep a high mountain of pasta by turning the plate while twisting the pasta.

2. On top of the pasta, put carefully the grilled chicken.

3. With a spoon, cover the pasta and chicken with the carbonara sauce. Be generous in putting the sauce so as not to dry the pasta.

4. OPTIONAL: Garnish the plate with chopped coriander and grated cheese.
