Fish Yellow Curry

I love yellow curry because it is so easy to cook but creamy and delicious. I usually make it with fish but chicken is great too.

For easy and fast yellow curry, here’s my simplified yellow curry recipe.

Ingredients:

For Curry paste: grind the following to a paste (ginger, garlic, onion)

2 tbs. oil

1 tsp. mustard seeds

1 large onion, chopped

1 tbs. turmeric powder

2 tbs. curry paste

cup of water

half kilo fish or chicken, cut into desired pieces

2 green chillies, halved

a quarter cup coconut milk, thick

(canned or fresh)

1 large tomato, chopped

a small bunch of coriander leaves, roughly chopped

salt and pepper to taste

Procedure:

1. Prepare the curry paste and set aside.

2. In a heated cooking pot, put the oil. When the oil is hot, put the mustard seeds and wait till they pop. Then, put onions and saute until translucent, then add turmeric and prepared curry paste. Lower the fire to prevent the spices to burn. Add a teaspoon of water if oil is too hot. Season with a pinch of salt and pepper then stir for half minute.

3. Add a cup of water and boil. When the sauce is boiling, add the fish (chicken), cover and let it simmer until the protein is cooked.

4. When the protein is cooked, add green chillies and coconut milk. Simmer in a low fire for a minute then add tomatos and season with salt and pepper to a desired taste. Cook for another minute and then remove the pot from fire and add coriander leaves.

Serve hot with rice.
