Another vegetarian dish that is favorite of mine is the Chana Masala or Chole Masala or Chickpea Curry. I love it with roti or with hot boiled rice. Preparing Chana Masala needs planning since the chickpeas must be soak for overnight, if not, it will not be cooked. In outside India though, canned chickpeas are available, so in this case, there’s no need for soaking. Below is the recipe of Chana Masala. Ingredients: 1 cup chick peas (if using canned, skip #1 & 2) 1 Onion 1 Tomato 1Green...

Prawn is one of my favorite ingredients. It is easy to cook and so tasty too. One of my favorite dish is prawn curry. What I love this curry is that the gravy is full of prawn’s powerful taste that even without eating the prawn, you’ll feel that you have it. I love to eat prawn curry with steamed rice, since the rice absorbs the flavor of the prawn through its gravy. Want to try prawn curry? Here’s the recipe: Ingredients: (Serves 4) 400g large raw prawns, shell on ½ tsp ground...

Pasta is one of my favorite ingredients. I usually use spaghetti but for a change, a fusilli or penne are great too. I occasionally cook lasagna, only when there are friends and guests around but for every day meal, a spaghetti or fusilli always comes handy and easy to cook. Last night, I had some prawns I bought last weekend, so I thought a fusilli pasta with tomato sauce would be a great dinner. I also made a garlic bread stick as a side for the pasta. As for the sauce, I just blanched the tomatoes...

Matter Paneer – Cottage Cheese Green Peas Curry Every week, I would buy a pack or two of paneer. Paneer or cottage cheese is a typical ingredients in Indian cooking. Paneer is like tofu but has a silky and creamy taste because paneer is made from milk. Uncooked paneer should be stored in the refrigerator. Mattar Paneer (Paneer Green Peas Curry) is one of the common dishes using paneer and mostly cooked and ordered in a restaurant. It is a vegetarian dish but non-vegetarian eater like me loves...

caramel with lemon custard I recently saw a travel show in TLC which showed a Mexican flan recipe and I thought it was very similar to a caramel custard which are both made of eggs, milk, and baked/steamed with a caramelized sugar. The host of the show said that Spanish brought it to Mexico, so I wonder who brought it to India. Here in India, we have an eggless version of caramel custard, in this case, there is a custard powder which can be bought in store. The custard powder is then just dissolve...

From my last trip in Israel, I got this sachets of coffee from the airline. If you are a coffee lover, I mean not like the India way of drinking coffee, no cream or milk please, then you would like the coffee I got from the airline. It’s like the usual coffee served in the coffee shops in Middle East. Of course the smell is fantastic and the bitter taste amazing. Oh, don’t just gulp the coffee, anyways, it should be sip only :p Well, I said don’t just gulp the coffee because...

I made my own version of pasta carbonara without egg and heavy cream, and bacon. Since bacon is not really popular in India, I cooked my usual pan-grilled chicken to partner my pasta carbonara. Try my pasta carbonara with pan-grilled chicken recipe and tell me how it is. It’s so simple and cheap. PASTA CARBONARA Ingredients: 250 gms long pasta (spaghetti) 1 medium onion, chopped 2 cloves garlice, chopped 1 teaspoon flour cheddar cheese, grated 1 cup milk salt and pepper Procedure: 1. Boil...

India is known for rich vegetarian dishes. Millions of Indians are vegetarian and they are not being deprived of food, delicious food. Although I am not a vegetarian, during holy festivals and whenever  I have health problems, I opt for vegetarian dishes. Last week, for several days, I was on vegetarian diet. One of the veg dishes I prepared was the mushroom and potato curry. One thing that I like using mushroom in my vegetarian dish is that mushroom substitutes for meat that you will not miss...

I have been a great fan of Jaime Oliver, a chef, a TV personality, and a food revolutionist for school. I always watch his show in Travel and Living and have tried many of his recipes which are always a success. My favorite was his recipe of oven-roasted whole chicken with veggies. Oliver had been an advocate of changing the food in school. In most studies, US students eat lunches that are high on fat. Jaime Oliver is changing that through his TV show, Food Revolution. Although in some school districts,...

I got this mini pizza base in the French Loaf last time I went there and since I love pizza, I thought of making really beautiful mini pizza.  I don’t have this big oven, just a small one, but it is enough for baking pizza. I usually make my own pizza instead of buying one. I think the last time I went to  a pizza house was one year ago. Anyways, let’s for back to  our mini pizza. It’s really easy to make. I decided to make assorted toppings mini pizza. Ingredients: 12 pieces...
