Whenever I buy carrots, it’s always in abundance. I love them sauteed, in soup, grilled with chicken. I also love it sweet, so I decided to make Carrot Halwa this weekend just in time the last bit of chocolate fudge vanished from fridge. It’s so easy to make Carrot Halwa and the ingredients are so simple that they’re always found in your kitchen.

carrot halwaIngredients:

2 cups of grated carrots
2 cups of milk
1 cup of sugar
1/2 tsp salt
2 tablespoon of ghee
1/4 cup raisins and nuts (cashew, almond)
2 cardamom (seeds crushed)


1. Heat the ghee in a small pan and fry the nuts and raisins in it. Set aside.
2. Heat the milk in a heavy bottomed pan and add the carrot to it.
3. Cover and cook it on medium flame, stirring occassionally to avoid sticking to the bottom.
4. When all the milk is absorbed by the carrot, add salt, sugar and stir continuously.
5. After about 8 minutes the oil starts getting separated from the halwa. At this stage, add cardamom, fried raisins,nuts and ghee.
7. Mix for another minute and switch off.

Serve as dessert or snack. Perfect for flat bread too.
